Meatless Chipotle Burrito/Taco Filling

Made from frozen ground meat-like soy crumbles, no one will know it’s meatless! Serve it in whole-wheat flour tortillas or taco shells for heart-healthy burritos and tacos. You can even present it as a party dip with whole-grain tortilla chips. Soy protein is a complete protein, plus it may help lower cholesterol, reduce risk of certain cancers and help control diabetes.

Makes about 3⅓ cups filling (10 servings, ⅓ cup per serving)

Ingredients
12 ounces frozen meatless soy burger-style crumbles (not thawed)
1 can (14 ounces) petite diced tomatoes with green chilies
1 can (4.5 ounces) chopped green chilies
1 finely minced chipotle chili (from 7-ounce can chipotle chilies in adobo sauce)
1 teaspoon adobo sauce
1 teaspoon chili powder
½ teaspoon crushed red pepper
6 drops hot pepper sauce

Directions
1. Mix all ingredients in a large skillet.

2. Cook over medium heat until heated throughout (about five minutes).
