Made from frozen ground meat-like soy crumbles, no one will know it’s meatless! Serve it in whole-wheat flour tortillas or taco shells for heart-healthy burritos and tacos. You can even present it as a party dip with whole-grain tortilla chips. Soy protein is a complete protein, plus it may help lower cholesterol, reduce risk of certain cancers and help control diabetes.
Makes about 3⅓ cups filling (10 servings, ⅓ cup per serving)
Ingredients12 ounces frozen meatless soy burger-style crumbles (not thawed)1 can (14 ounces) petite diced tomatoes with green chilies1 can (4.5 ounces) chopped green chilies1 finely minced chipotle chili (from 7-ounce can chipotle chilies in adobo sauce)1 teaspoon adobo sauce1 teaspoon chili powder½ teaspoon crushed red pepper6 drops hot pepper sauce
Directions1. Mix all ingredients in a large skillet.
2. Cook over medium heat until heated throughout (about five minutes).
