So many different dressings complement mixed greens, but this grapefruit vinaigrette is a cool, refreshing flavor burst. Plus, it’s made with walnut oil, a vegetable oil filled with omega-3 fatty acids for protecting your heart. You’ll find walnut oil right near the olive and canola oil in supermarkets and specialty food stores. Mixed greens contain far more vitamins, especially vitamin A, than iceberg lettuce.
Makes 8 servings (2 cups mixed greens with 2 tablespoons vinaigrette per serving)
Ingredients¾ cup grapefruit juice1 teaspoon honey½ teaspoon Dijon mustard½ teaspoon finely minced garlic1 tablespoon minced shallot3 tablespoons walnut oil16 cups mixed salad greenssalt and freshly ground black pepper
Directions1. Whisk grapefruit juice, honey, mustard, garlic and shallot in a small bowl.
2. Add walnut oil and continue whisking.
3. Add salt and pepper to taste.
4. Toss mixed greens with dressing.
