Wonder if you’ll ever find a way to love leafy green vegetables like kale? Well, one bite of these savory, crispy chips and you’ll be a kale convert. Kale is filled with immune system–boosting antioxidants like vitamins A and C, as well as the eye-protective carotenoids lutein and zeaxanthin. The key to crispy cooking and even browning is spreading the kale in a single layer and stirring frequently while cooking. Enjoy these super-simple and nutrient-rich chips as a snack or a side to sandwiches and soup.
Makes about 6 cups (6 servings of 1 cup each)
Ingredients10-12 ounces fresh kale (roughly 2 medium bunches)2 tablespoons extra-virgin olive oil1/4 teaspoon garlic powder1/4 teaspoon fine sea salt
Directions1. Heat oven to 375 F.
2. Coat one or two large rimmed sheet pans with cooking spray.
3. Wash kale bunches and pat them dry. Trim center ribs and stems and tear leaves into 2- to 3-inch pieces.
4. In a large bowl, toss kale pieces with oil and seasonings. Blend well to coat all pieces. Spread in single layer on prepared pan(s).
5. Cook 7-15 minutes or until pieces are crispy and browned on edges. Stir several times during cooking to ensure even browning and crispiness.
